Blueberries + Cream Oatmeal

Say what you will, but oatmeal doesn’t have to be bland or boring.

Unless you eat it plain, I suppose. But that’s no fun, now is it? No. There is a better way to eat oatmeal and it starts with adding fresh, sweet and tangy ingredients.

I love oatmeal because there are so many possibilities and flavors you can combine with it. Two of my go-to oatmeal combinations are peanut butter banana and today’s recipe: blueberries, maple syrup, almonds and cream.

The best thing about oatmeal is that it can be ready in a matter of minutes for any number of people. You can even make large batches of it to feed an entire family for breakfast. The only prep time required is spent determining what you put into the oatmeal once it is cooked.

Now, before we talk about topping, let’s talk about the oats. I prefer traditional rolled oats to quick cooking oats. It gives the meal more texture and a real stick-on-your-bones kind of feeling that satisfies for hours. It is also less soupy and more appetizing in my opinion.

Blueberries + Cream Oatmeal
Recipe Type: Breakfast
Prep time: 5 mins
Cook time: 7 mins
Total time: 12 mins
Serves: 2
This hearty breakfast recipe for Blueberries + Cream Oatmeal is ready in minutes and satisfies for hours.
Ingredients
  • 1 cup rolled oats
  • 1 cup water
  • 3/4 cup almond milk (or regular milk)
  • 1 scoop vanilla protein powder (optional)
  • 1/2 cup blueberries (or 3/4 if you’re feeling really fruity!)
  • 2 tablespoons maple syrup
  • 1 tablespoon dairy-free (or regular) cream cheese
  • 2 tablespoons almonds, chopped
Instructions
  1. Add water and almond milk to a medium saucepan over medium-high heat and bring to a boil. Stir in oats and protein power and cook for about 5-7 minutes over medium heat, stirring occasionally.
  2. While the oats are cooking, add the blueberries and maple syrup to a small saucepan over medium heat. Cook until the blueberries are slightly softened, about 2 minutes. Remove from heat and set aside.
  3. Scoop oatmeal into bowls and divide the remaining ingredients between the two. Stir until combined and top with more maple syrup if desired.
