You only need four ingredients to make these naturally-sweetened, homemade Reese’s peanut butter cups! Dark chocolate + coconut oil + peanut butter + honey = pure deliciousness.

When you think about the things that make your life sweeter — the things that make life even more worth living — what comes to mind? If you’re a believer, I’m sure one of the first things that popped into your mind was having a personal relationship with Jesus. Having someone who loves you enough to leave his throne, die for you and rescue you — It just doesn’t get any sweeter than that does it?

Ladies and gentlemen meet the newest member of the Gaskill family — Reese, our little peanut butter cup! We adopted this beautiful Cavalier King Charles Spaniel this weekend and he has already been making our lives sweeter and lighting the days and nights up with joy.

Sure he is only halfway potty trained and has had his share of accidents this past weekend, but we’re learning, loving, playing and laughing together. It has been a beautiful adventure.

I’ve wanted a dog since before I can remember. But because my parents weren’t pet people, I never had one. Until now. Alex and I had been talking about getting a dog since we got married last October, but the timing never seemed right. Then, one year into our marriage, we found out we would be moving to Des Moines and all of a sudden we knew the time was now.

Of course being a food blogger, I will always want to name pets after food-related things. (Girls names are way easier let me tell you!) We ended up naming him after one of our favorite treats: Reese’s Peanut Butter Cups
. And to celebrate his homecoming this weekend I made these homemade peanut butter cups, which I am so excited to share with you on the blog today!

Homemade Reese's Peanut Butter Cups

Homemade Reese’s Peanut Butter Cups
Serves: 8
Ingredients
  • 3 oz. dark chocolate (I used Lindt Dark Chocolate Excellence, Touch of Sea Salt)
  • 2 teaspoons coconut oil
  • 2 tablespoons peanut butter
  • 2 teaspoons coconut oil
  • 1 teaspoon honey
Instructions
  1. Line a mini muffin tray with 8 cupcake liners and set aside.
  2. Fill a small pot 3/4 of the way with water and bring to a boil on high heat. Break the chocolate bars into squares and place into a ceramic or glass bowl. Reduce heat to medium-low and place bowl on top of the boiling pot of water to make a double boiler. Stir frequently until all chocolate is melted and smooth and remove from heat.
  3. Use a spoon to drop a small amount of melted chocolate into the bottom of the 8 mini muffin liners. Place the chocolate-filled liners in the freezer to set, about 10 minutes.
  4. While the chocolate is hardening in the freezer, make the peanut butter filling. In a small bowl mix together peanut butter, coconut oil and honey, and stir until smooth and creamy. Remove the muffin tray from the freezer and place a heaping teaspoon of the peanut butter filling in the middle of each chocolate shell. Cover each cup with a final layer of melted chocolate, and return to the freezer to set for at least 1 hour before serving.
  5. Store peanut butter cups in the freezer in an airtight bag. When you are ready to enjoy them, remove desired amount from the freezer and let thaw on a counter for a few minutes.

    So much to say! First of all, I am a believer, but the first thing that popped into my mind was puppies. Shh don’t tell the man upstairs OR my husband! Second of all, you got the dog I have been wanting!!!!!!!! *insert pouting here* I am SO happy for you. But super jealous! Ever since my oldest fur child passed away 6 months ago I have been looking at Cavalier King Charles Spaniel breeders! Your pup is sooooo cute! Again, super jealous. ALSO peanut butter cups just so happen to be my favorite candies (as evidenced by the nearly empty bag in my kitchen) and these look so good! I can’t wait to make them! Did you use natural peanut butter or peanut butter that had some sweetener in it already?

    First of all, how cute is that puppy?! Secondly, I loveeee reese cups. Once, I took a vegan Indian cooking class and she taught us how to make vegan reese cups and they were DELISH! I’m not vegan so either version works for me — PB and Chocolate is the best combo!
