I can’t wait to share this recipe for sweet potato skins with you, but first … I have a terrible confession to make.
It’s almost December and I have yet to host a football party. {Gasp}
I know it’s sad! Between selling our home, me looking for a new job, getting a new job, and oh yeah, moving to a new state, there just hasn’t been time for entertaining lately.
As born and raised Hoosiers my husband and I still root for Notre Dame. A couple of weeks ago my husband actually had the game on, and when I walked into the room all I could think about was how I wanted to have a football party. You know, the kind of party with ridiculous amounts of appetizers, beer, games and laughter.
Coincidentally, Snap Fitness contacted me a few days later asking me to make a game-day sweet potato skin recipe for their blog. It was the exact kind of motivation I needed to start planning a future football palooza.
Fact: Football party food doesn’t have to be completely unhealthy. It can be fun while still being good for you. Classic potato skins loaded with cheese and heavy sauces are so last year. Switch things up with this sweet potato version – packed with chickpeas, tomatoes, seasonings, and topped with a tasty hummus sauce.

Yum, these look so tasty, and actually I think I would prefer these to the regular potato skins. Moving can be so stressful when your life is in upheaval for what seems like forever. But now that you are in your new city I’m sure things will simmer down and you will be having football parties before you know it 🙂

Two things I really love about this recipe besides the fact that they are potato skins – you used sweet potatoes and chick peas, which are two of our favorite ingredients. Cannot wait to try these out.

I never thought about combining sweet potatoes with tomatoes, chickpeas and a hummus sauce. In fact, at first when I read that, I was like WHAT? Then I started thinking about how the sweet and savory tastes would meld, and it makes sense. What an incredible recipe, Lauren!
